Exquisitely

The “SquisitaMENTE” cooking course will take place during the second semester of the 2018-2019 academic year, in collaboration with the Italian Federation of Chefs. Luiss Guido Carli offers all its students who are duly enrolled for the 2018-2019 academic year the opportunity to participate in a Bachelor’s, Master’s, or Single-Cycle degree program.

The course features eight thematic modules, each consisting of a 3.5-hour session.

Cooking isn't a passion for just a select few. Anyone can cultivate the sensitivity and creativity of great chefs, thereby embarking on a journey of personal growth.

The course aims to introduce students to cooking and, most importantly, to healthy eating through hands-on experience, fun, and teamwork. Everyone will work together to prepare the dishes planned for each day of the course, allowing all participants to discover the endless possibilities and combinations of healthy eating, develop their culinary skills, and more.

The course will therefore focus on sustainability, health, the use of local products (from our garden), cuisines from around the world, and cooking as a way to socialize and break down cultural and social barriers.

The course will take place in both the first and second semesters and will consist of the following 8 modules:

  1. The ABCs of Cooking: A Brief Introduction to Survival – 1 session lasting 3.5 hours
  2. Healthy cooking techniques – 1 session lasting 3.5 hours
  3. Traditional pasta dishes: taste and health – 1 session lasting 3.5 hours
  4. Main courses: there’s more than just the grill – 1 session lasting 3.5 hours
  5. Vegetables: More Than Just a Side Dish – 1 session lasting 3.5 hours
  6. Finger food & presentation: a feast for the eyes – 1 session lasting 3.5 hours
  7. Healthy desserts – 1 session lasting 3.5 hours
  8. Plant-based cuisine around the world – 1 session lasting 3.5 hours
